Banana and Strawberry Nut Butter Toast

Need a quick breakfast, brunch or snack idea which helps to introduce more fruit into your diet at the same time?

Why not try a lovely fruity toast? Toast a piece of seeded bread or sourdough and smear over with a nut butter of your choice. Top with banana slices and a handful of strawberries and enjoy!

This delicious Nut Butter Toast provides a lovely nutrient balance

The toast contains some carbohydrate with lots of goodness from the seeds (if its sourdough this is great for gut health), the nut butter provides a mix of nutrients including protein, fibre, B vitamins, zinc, phosphorus and vitamin E.

The banana is a good source of magnesium – the happy mineral (helping to reduce stress) and provide numerous other important nutrients too including potassium and vitamin B6.

Strawberries are very rich in antioxidants including vitamin C and are also a good source of folate

They are also rich in anthocyanins which help to reduce inflammation in the body and have shown to reduce CRP (C-reactive protein which is a medical marker of inflammation) levels when a portion a day is consumed. The seeds of strawberries also contain some omega 3, again important in helping reduce inflammation and for heart health.

Why not try with these alternatives!

If you don’t like banana or are avoiding it – swap for avocado as this is another great source of many nutrients including healthy monounsaturated fat, magnesium and is also low in carbohydrates.

You can also swap strawberries for raspberries and add some blueberries too!
