Celery is fantastic for hydration, low in calories, helps to lower blood pressure, good for the skin, hair and bones and is a great source of vitamin c, potassium and calcium. What’s not to love!
Why not try making this warming celery soup, perfect for all round goodness!
Ingredients (for 4 portions)
50g butter
1 large onion, finely chopped
2 large potatoes, chopped
400g chopped celery
Splash of cream
1 chicken stock cube
Pinch of sea salt
Pinch of ground pepper
couple of pinches of nutmeg
How to make
In a saucepan, melt the butter. Reduce the heat to a minimum.
Add the onion, potato, and celery and cook for about 5 minutes on low heat. To avoid sticking, stir constantly.
Add the salt, pepper, nutmeg, and a crumbled chicken stock cube; cover with hot water.
Bring the water to a boil. Cover and cook on low heat (about 10 minutes) until the vegetables are tender.
Blend the soup a bit at a time using a blender.
Just before serving, add a splash of cream and stir. Enjoy… Great with some warm sourdough too!
